Tasting notes

 

  • Colour: Bright purple.
  • Nose: Complex with mocha, black berries and liquorice stick aromas.
  • Palate: Soft, with lovely sweetness and a pomegranate hint. Finishing on pepper offers a general sensation of freshness.
  • Food pairing: Served at 16 °C, with ewe-cheeses, basil and sun dried tomatoes.

The vineyard

  • Soil type: Limestone and clay, pebbly terraces
  • Age of the vineyard: Merlot 25 and 22 years, Cabernet 10 years, Carignan 50 years, Syrah 22 and 12 years
  • Pruning: Cordon de Royat
  • Harvest: Hand harvesting
  • Average yield: Merlot 61 hl/ha, Cabernet 62 hl/ha, Carignan 41 hl/ha, Syrah 36 hl/ha
  • Density of planting: 4400-5000
  • Elevation: 70-90 m
  • Climate: Mediterranean

Vinification

Traditional skin contact (2 weeks), with daily rack or pumping overs. Carbonic maceration with entire bunches for 17 days (Carignan).

  • 70 % of the wine is aged in stainless steel, 30 % in American (70%) and French (30%) oak barrels for 6 months
