Tasting notes

 

  • Colour : lovely red garnet
  • Nose : Explosive with smoky, balsamic and mineral (graphite) notes, and even a touch of eucalyptus.
  • Palate : This aromatic intensity is accompanied in the mouth by silky tannins and a general freshness, finishing on liquorice.
  • Food pairing : it will be a fine match for a well-seasoned lamb stew or even hot, spicy dishes.

The vineyard

  • Soil type: Limestone and clay pebbly terraces
  • Plot selection of :
  • Syrah : 25 to 30 year-old vines producing 42 hl/ha
  • Grenache : 44 year-old vines producing 37 hl/ha
  • Carignan : 51 year-old vines producing 42 hl/ha
  • Pruning : Cordon de Royat
  • Harvest : Hand harvesting
  • Density of planting : 4400-5000
  • Elevation : 70-90m
  • Climate : Mediterranean

Wine Making

At the reception, the grapes are sorted on a selection table. Traditional winemaking for Grenache, with daily racking or pumping overs. Maceration between 2 and 4 weeks. Carbonic maceration for Syrah and Carignan with entire bunches (15-18 days). The rest of the blend goes through normal maceration for 3 to 4 weeks.

Oak barrel ageing (45% of the wine) for 8 months. 2/3 US and 1/3 French oak barrels. The 55% remaining are aged in vats
